Mexican Horchata

A traditional Mexican drink that can be paired with savoury dishes as well as relished on its own. The light, airy texture of ground rice with creamy vanilla creates a cozy feeling, while the warmth of the cinnamon extract adds depth to this delightful beverage.

Method :

Add the raw rice and half the quantity of hot water to a blender and roughly grind. Add the rest of the water and grind well. Pour this mixture into a container. Add cinnamon extract and stir well. Close this container with a lid and refrigerate it overnight for at least 8 hours. Pour this rice mixture through a fine mesh strainer or cheesecloth and collect all the liquid in a bowl. Add milk, vanilla, sugar and mix and chill. Stir well and serve over ice.
