This light and refreshing recipe features noodles with a tanginess of lemon and a drop of coriander leaf extract. The freshness from the coriander provides the perfect contrast to the citrus notes from the lemon. Ideal as a light centrepiece meal, this dish makes for a delightful fusion of flavours.
Cook noodles in adequate water and salt. Strain water, add oil to the noodles and keep aside. Melt butter in a saucepan, add chopped garlic and sauté. Mix olive oil with coriander leaf extract and add it to sauteed garlic. Cook for a few seconds and add cooked noodles and mix well. Add lemon juice, salt, noodle broth and pepper. Mix well and serve hot.
