Botanical Name of Raw Material:  Myrystica fragrans Houtt 

Nutmeg tree, a species under Myrystica fragrans Houtt, produces two separate spices – Nutmeg  and Mace. Nutmeg is the dried kernel of the seed and Mace is the dried aril surrounding it.  Mace essential oil is obtained by the steam distillation of dried aril of Myrystica fragrans Houtt. The oil is a pale yellow to reddish yellow liquid, with a sweet, spicy and slightly woody undernote. The oil is mainly used for flavouring preparations, especially in soft drink formulations. The main components are pinenes, Sabenene, Terpineol and Myristicin.

Mace is the dried aril, a lacy coating, that surrounds a nutmeg seed. The steam distillation of the dried aril of Myrystica fragrans Houtt produces Mace Essential Oil. The main components of Mace Oil are pinenes, Sabenene, Terpineol and Myristicin. Highly concentrated, large volumes of dried aril is required to produce a drop of pure, natural mace oil.

What is the advantage of using steam distillation to extract Mace Oil?

Steam Distillation is used for distilling volatile components from various raw materials, like spices, seeds, leaves, roots etc. Mace oil is obtained by the steam distillation of dried aril. These oils are generally recovered by directly applying steam to raw materials followed by condensation of the distillate. The temperature of the steam needs to be carefully controlled – just enough to force the plant material to let go of the Mace essential oil, yet not too hot as to burn the plant material or the Mace oil.
