Dill is an annual herb that hails from the celery family, Apiaceae. Dill seed is similar to caraway in flavour. It also tastes like the fresh or dried dill leaves, often used as a spice. Dill seed oil is obtained by the steam distillation of dried seeds of Anethum Sowa Roxb. The product is a free-flowing liquid, with a yellowish to brownish-yellow colour. It has a characteristic fresh, warm, spicy, carvonic odour. Major components in dill seed oil are Dihydro carvones, carvone and apiol.
